Ingredients

  • 500 g wheat flour, type 550
  • 0.5 ½ cube yeast
  • 250 ml water, (1)
  • 100 ml milk
  • 15 g salt
  • 50 g herbs, fresh or frozen
  • 100 g muesli mix (without suar)
  • 100 ml water, for soaking the muesli (2)
  • 1 tablespoon butter, liquid, for glazing the bread
  • 1 tablespoon muesli mixture (without sugar) for sprinkling

Instructions

  1. Let the muesli mixture with 100 ml water (2) soak for approx. 15-20 minutes.
  2. In my favorite organic mixture, which I also like to use for bread, are: whole grain oat flakes, wheat flakes, rye flakes, barley flakes, sunflower seeds, buckwheat and sesame seeds.
  3. In the meantime, warm the water (1) and milk lukewarm and crumble the yeast into it. Add flour and salt and knead for approx. 4 - 5 minutes to form a smooth dough. Let rise for about 30 minutes and then add the soaked muesli mixture and the washed and prepared herbs and knead well.
  4. Now fold the dough and shape it into any shape. Rounding or rolling elongated is also possible. Cover and leave to rise again until it has enlarged significantly and, if desired, brush with the liquid butter and sprinkle a little dry muesli mixture.
  5. Preheat the oven to 220 ° C top and bottom heat, steam once and bake the bread for about 35 - 40 minutes until golden brown.

  7. Of course, you can also bake the bread with herbal mixtures and, depending on the purpose, add fried onions, for example. You can also use wholemeal flour or add other degrees of milling to flour type 550. The imagination knows no limits.
  8. Tip:
  9. Since the bread is very tasty, it can save additional toppings for breakfast with butter or cream cheese. After cooling, it can be enjoyed immediately and, for example, also an ideal side dish for grilling!
