Ingredients

  • 2 cucumber (s), peeled, grated and drained in a sieve
  • 4 clove (s) garlic, diced and crushed with salt (amount can be increased)
  • 300 g yourt, (Greek cream yourt, 10%)
  • 200 g sour cream, (can be replaced with quark for the calorie-conscious)
  • 100 g yourt
  • 1 tablespoon olive oil
  • salt and pepper
  • some lemon juice

Instructions

  1. I know there are already enough recipes for this delicious sauce, I know.
  2. In contrast to the others, mine has the advantage that most of the cucumbers show their moisture in the sieve. This makes the whole thing more flavorful and less runny.
  3. To prepare:
  4. The cucumbers are grated, preferably peeled, but with garden cucumbers you can leave the skin on. Then let them drain in the colander for a few hours.
  5. Mix the cream yoghurt and sour cream (or quark) until smooth. Bring to the right consistency with natural yoghurt. Stir in the garlic and the olive oil. Season to taste with enough salt, coarsely ground pepper and a little lemon juice.
  6. Let it steep and season again before serving.
  7. I don`t like herbs, as is often recommended, e.g. dill. It`s really a matter of taste. We usually serve tzatziki with grilled dishes and fresh bread.
