Lean Olivier Salad

This Olivier salad, without meat and sausage, but with squid, is perfect for a festive table for the New Year.

Cook: 1 hour

Servings: 8


  • Potatoes – 5-6 pcs.
  • Squids – 2 pcs.
  • Carrots – 1-2 pcs.
  • Green peas – 1 can
  • Fresh cucumbers – 2 pcs.
  • Bulb onions – 1 pc.
  • Olives – to taste
  • Lean mayonnaise – to taste
  • Greens to taste


  1. Here is a set of products for a lean salad “Olivier.
  2. Dip the squid in boiling water and cook for 3-4 minutes. Then drain and cool.
  3. Boil jacket potatoes and carrots. Cool and clean.
  4. Wash fresh cucumbers and cut into cubes.
  5. Cut the carrots into cubes.
  6. Cut the potatoes into cubes.
  7. Peel the onion, wash and cut into small cubes.
  8. Peel the squid and cut into strips.
  9. Put all the ingredients in a bowl. Open a can of peas. Add to bowl.
  10. Wash and chop the herbs. Season with pepper and salt. Add Mayo. Mix everything and put the Olivier salad in a salad bowl. Decorate.
  11. Ready salad “Olivier”.
