Ingredients

  • 500 g pasta (linuine or capellini)
  • Salt water
  • 80 g butter
  • 100 g almond (s), rouhly chopped
  • 70 g raisins
  • 40 g pine nuts or pistachios
  • 60 g parmesan, rated, possibly more
  • 1 orange (s), untreated, the abrasion it
  • possibly parsley or basil
  • pepper from the grinder

Instructions

  1. In a large pan (the linguines will be added to the pan later), heat the butter over medium heat until it begins to foam and turn brown. Turn off the stove.
  2. Add the chopped almonds, raisins and pine nuts or pistachios and stir. Put aside.
  3. In a large saucepan with salted water, cook the linguine according to the instructions on the packet. Put the cooked linguine with the grated Parmesan in the still hot pan and stir everything vigorously. Serve immediately and sprinkle with the freshly (!) Grated orange peel and pepper.
  4. If you like, you can also sprinkle finely chopped parsley or basil cut into thin strips.
  5. You can also swap some of the raisins for dried figs or apricots, depending on what you have in the house. That tastes very tasty too.
