Peel the ripe mango, cut the flesh from the core and dice. Peel the onion, chop it up and sweat it in the oil until translucent (do not let it brown).
Add the mango pieces and 100 ml water and reduce everything over a low heat until creamy. Season with curry, cayenne pepper, salt and sugar and leave to cool. When the mango mixture has cooled, stir in the mayonnaise.
If you don`t make the mayonnaise yourself, please don`t use the cheapest, the difference is clearly noticeable in the taste!
So far it has been a hit with all fondues, but also super delicious as a spread with smoked turkey breast!
