Ingredients

  • 1 kg squid (s), (tubes), cleaned
  • 1 lemon (s)
  • 100 ml olive oil, (good) or more
  • 3 bulbs garlic, (Chinese) = 12 local garlic cloves
  • 1 bunch parsley, (large)
  • some garlic granules
  • some chilli flakes, (I`ll use a Chipotle-Hanero mixture)
  • some sea salt
  • some salt, (Fleur de Sel)

Instructions

  1. Allow frozen tubes to thaw (clean if necessary) and pat dry.
  2. Mix 5 tablespoons of olive oil, lemon juice, chilli flakes, garlic granules and sea salt into a marinade.
  3. Score the squid tubes diagonally on the surface (chisel), then place in the marinade and leave to marinate for at least 2 hours.
  4. Then bring salted water to the boil in a saucepan (add some of the marinade to the cooking water), let the squid tubes boil for 2-3 minutes, then take them off the fire and let them steep for 10 minutes.
  5. In the meantime, cut the garlic into small cubes and chop the parsley. In a pan, heat the remaining marinade and the remaining olive oil with the garlic and parsley. Lift the tubes out of the water and cut into bite-sized pieces, put the pieces in the pan and bring to the boil (if necessary, add a little more of the cooking water). Season with fleur de sel and serve with a baguette.
  6. This amount is enough for 2 people as a main course and for 4 as a starter!
