Meat Rolls with Cheese, Pickled Cucumbers and Mustard

Delicious and tender pieces of pork, with cheese and pickled cucumbers inside – these rolls will become an adornment not only for a family dinner but also for a festive table. Thanks to a short marinating in lemon juice and then quick frying, the baked meat is very juicy. Lemon juice and mustard add a pleasant flavor to the dish.

Cook: 1 hour 10 min.

Servings: 6

Ingredients

  • Pork (loin without bone or neck) – 600 g
  • Hard cheese – 60 g
  • Pickled cucumbers – 50 g (1-2 pcs.)
  • Salt – 1.5 teaspoon (to taste)
  • Ground black pepper – 1 teaspoon (to taste)
  • Lemon (juice) – 50 g (0.5 pcs.)
  • Medium hot mustard – 1 tbsp
  • Sunflower oil – 60 ml

For filling:

  • Fresh basil – 2-3 sprigs

It is best to use a boneless pork loin or neck – these pieces of pork are easiest to cut into even layers.
We take mustard not very strong.
You will also need wooden skewers to fasten the rolls

Directions

  1. Cut the meat into layers no more than 1 cm thick. If desired, the fat can be cut off.
  2. We beat off each layer of meat well from both sides. Salt and pepper on both sides.
  3. Squeeze the juice out of the lemon.
  4. Sprinkle each broken piece of pork with lemon juice on both sides and leave to marinate for half an hour.
  5. Cut the cheese and pickled cucumbers into cubes. The number of pieces of cheese and cucumber depends on the number of layers of meat. I have 1 cheese block and 1-2 cucumber blocks per layer of meat.
  6. Grease each marinated piece of meat on one side with a thin layer of mustard.
  7. Spread a block of cheese and 1-2 cubes of cucumber on the edge of the prepared layer of meat.
  8. We wrap it in a roll.
  9. We fasten it with wooden skewers.
  10. In the same way, we form rolls from the remaining meat, cheese, and cucumbers. I got 6 rolls. We turn on the oven to heat up to a temperature of 220 degrees.
  11. Heat 3 tablespoon in a frying pan. tablespoons of sunflower oil and lay out the rolls.
  12. Fry the rolls for 2-3 minutes on each side, until browned.
  13. We put the rolls in a baking dish, greased with the remaining oil, and send them to an oven preheated to 220 degrees. We bake for 10-15 minutes.
  14. Meat rolls with cheese and pickled cucumbers are ready. Before serving, remove the skewers from the rolls. Serve to the table, garnished with fresh herbs. Such rolls will be good not only hot but also cold. Hot, of course, will be tastier. 🙂 Bon Appetit!
