Meat Stew with Vegetables

There are a great variety of cooking options for this delicious dish. I offer you a recipe for a delicious, aromatic pork stew with vegetables and herbs in a thick sauce. This is the tastiest stew I know. Pork pieces fried until golden brown are stewed in sweet and sour sauce, the meat turns out to be incredibly soft and juicy, and vegetables perfectly complement this exquisite, rich bouquet.

Ingredients

  • Pork – 0.5 kg
  • Potatoes – 1 kg
  • Zucchini – 1 pc.
  • Bulgarian pepper – 3 pcs.
  • Hot pepper – 1 pc.
  • Tomatoes – 4 pcs.
  • Carrots – 2 pcs.
  • Bulb onions – 3 pcs.
  • Garlic – 5 cloves
  • Dill
  • Parsley
  • Tomato paste – 5 tbsp
  • Vegetable oil
  • Ground coriander
  • Ground black pepper
  • Salt
  • Bay leaf

Directions

  1. Cut the pork into small pieces.
  2. We send it to a frying pan preheated with vegetable oil.
  3. Fry over high heat until a beautiful golden brown crust appears.
  4. Cut the peeled onion into small cubes.
  5. Cut the carrots into slices.
  6. Add onions and carrots to the meat in the pan.
  7. Mix and fry everything together until the vegetables are soft, about 2 minutes.
  8. In the meantime, let’s take care of the courgette, potatoes and tomatoes. Cut the zucchini into pieces of 1.5-2 cm. If the zucchini is not young, then it must be peeled and removed from the seeds. I was young.
  9. We transfer the sliced ​​zucchini to a cauldron or other suitable dish in which we will stew the stew.
  10. Cut the potatoes in the same way as the zucchini.
  11. We shift to the zucchini.
  12. Scald the tomatoes with boiling water and peel them off.
  13. We cut them like the previous vegetables and send them to them.
  14. Stir the zucchini, potatoes, and tomatoes.
  15. Cut the peppers, peeled from seeds and stalks, into small squares. Cut the garlic into slices.
  16. Add pepper and garlic to the pan and fry for half a minute, stirring constantly.
  17. Then add the tomato paste, mix, cover, and simmer for another half minute over medium heat.
  18. We shift the contents of the pan into a cauldron, to the rest of the vegetables.
  19. Stir, add salt, black pepper, bay leaf, and 2 glasses of water.
  20. We put the cauldron on high heat and cover with a lid until it boils.
  21. Then reduce the heat to medium and simmer the meat stew with vegetables until the sauce thickens (30-40 minutes).
  22. By this time, the stew will be almost ready.
  23. Finely chop the dill and parsley.
  24. Add the greens to the stew, mix everything well and simmer the meat stew for about a minute, then turn off the heat.
  25. The stew is ready! A pleasant sweetish aroma of pork with vegetables is spread everywhere.
  26. Serve the meat stew with vegetables as an independent hot dish.
