Meatballs in Creamy Tomato Sauce

The meatballs prepared according to this recipe are very tender and tasty. The meatballs are prepared with the addition of fresh herbs and bread crumbs, and before frying they are breaded in flour, which allows them to preserve their juiciness. Creamy tomato sauce, in which meatballs are stewed, gives the meat a slight sourness, it can be poured over a side dish.

Ingredients

  • Pork (pulp) – 400 g
  • Cream 10% – 1/2 cup (100 ml)
  • Tomatojuice – 1 glass (200 ml)
  • Bulb onions – 1 pc.
  • Garlic- 2 cloves
  • Fresh parsley – 3 sprigs
  • Fresh dill – 3 branches
  • Bread crumbs – 2 tbsp
  • Flour- 2 tbsp
  • Vegetable oil – 50 ml
  • Salt- 1 teaspoon (to taste)
  • Ground black pepper – 1/2 teaspoon (to taste)

Directions

  1. Wash and dry the pork. Peel and wash the onion. Cream can be used with any fat content – I have 10%. Rinse and dry the parsley and dill. Set aside a few leaves of parsley and dill. Peel the garlic. Cut the onion into 4 pieces. Cut the meat into random pieces and pass through a meat grinder with a large wire rack. Transfer the minced meat to a deep bowl.
  2. Pass the onion, garlic and parsley through a meat grinder. Add to the minced meat bowl. Pour breadcrumbs into the minced meat – they will absorb excess moisture, and the minced meat will keep its shape well. Add 1/2 teaspoon of salt and 1/4 teaspoon of ground pepper. Mix the minced meat thoroughly until smooth
  3. Form small balls (meatballs) about the size of a large walnut. Roll each meatball in flour. Put meat balls in a frying pan with heated vegetable oil. Fry meatballs for 3-4 minutes on each side over medium heat until golden brown.
  4. Reduce heat to low. Then you don’t need to turn the meatballs over with a spatula, but just shake the pan slightly so that the meatballs are evenly fried on all sides.
  5. Pour tomato juice and cream into a pan. Add the remaining salt and ground pepper. Mix gently. (I do not recommend replacing tomato juice with tomato paste, the result will not be the same.) Cover the pan and simmer the meatballs in the sauce for 20 minutes, stirring occasionally. The sauce will evaporate a little and it will turn out to be thicker and silky, very tender.
  6. Meatballs in creamy tomato sauce are ready. Arrange the meatballs on plates and serve hot. Mashed potatoes are best served as a side dish. You can decorate the dish with fresh herbs.
