Ingredients

- 1 clove garlic
- 2 tablespoon olive oil
- 500 g minced meat, mixed
- 1 can corn
- 2 large tomato (s)
- 1 bottle sauce (salsa)
- 4 tortilla (s)
- 100 g cheese (e.. Gouda), rated
- 200 g crème fraîche or sour cream
- 2 tablespoon lemon juice
- salt
- Cayenne pepper

- Peel and finely dice the onions and garlic. Heat the oil in a pan. Fry the minced meat with onions and garlic and season with thyme, salt and cayenne pepper.
- Drain the corn and add to the minced meat. Wash, quarter and core the tomatoes and cut the pulp into small cubes. Add the tomato cubes to the minced meat, stir in the salsa sauce and bring to the boil briefly.
- Fill the tortilla cakes with 2/3 of the minced meat and roll up tightly. Spread the rest of the minced meat in a large baking dish on the floor and put the tortilla patties, which were previously cut in half across, into the dish.
- Mix the grated cheese with creme fraiche or sour cream and season with a little lemon juice. Spread the mixture on the individual tortilla rolls and bake in a hot oven (convection oven 175 ° C) for about 30 minutes.
