  • 600 ml milk
  • 4 egg yolks
  • 1 tablespoon flour
  • 140 g suar
  • Lemon (s) - zest or 1 vanilla pod
  • cinnamon

Instructions

  1. Beat the egg yolks with the sugar and flour and a pinch of salt.
  2. Add hot milk and the lemon zest or vanilla pod and whisk everything together well.
  3. Bring to the boil over high heat, stirring constantly, until the cream is a little thick.
  4. When the cream is ready, remove the lemon peel or vanilla pod.
  5. Sprinkle the cream with sugar and caramelize the sugar with a hot iron or just sprinkle with cinnamon.
