Ingredients

  • 2 kg mussel (s) (mussels in the shell)
  • 2 large onions
  • 1 bunch soup greens
  • 2 cans tomato (s), peeled
  • 6 cloves garlic
  • 0.25 liter ¼ wine, red, dry
  • 2 bay leaves
  • 8 grains black pepper
  • 2 tablespoon oil (olive oil)
  • 2 teaspoons salt, preferably coarse sea salt

Instructions

  1. Prepare onions and greens and fry lightly in 2 tablespoons of olive oil, add the garlic. Clean and wash the mussels. Throw away any mussels that have already been opened.
  2. Add the canned tomatoes to the lightly seared vegetables. Add 2 teaspoons of (coarse sea) salt, as well as the peppercorns and bay leaves; Layer the cleaned mussels on top of this brew. Add the red wine and enough water to just cover the mussels.
  3. Simmer for about 20 - 30 minutes, shaking the pot on the stove several times. When the mussels open, the meal is ready.
  4. Fresh baguette and of course a couple of glasses of red wine go well with it!
