Omelet with Rice, Unsweetened Yogurt and Green Onions

A regular omelet can be made more fluffy, interesting, and satisfying. A variety of fillings such as rice, unsweetened yogurt, curry, and green onions can help. And if you bake an omelet with rice in the oven, it will become even tastier. Try it, it’s not difficult at all!

Ingredients

  • Eggs – 4 pcs.
  • Rice – 75 g
  • Natural yogurt or sour cream – 100 g
  • Green onions – 15-20 g
  • Ground curry – 1/3 teaspoon
  • Salt to taste
  • Vegetable oil – for lubricating the mold

Directions

  1. Boil the rice in 400 ml of salted water for 15-20 minutes, until tender.
  2. If there is the excess liquid left, put the rice in a colander. Let the rice cool down. Chop the green onion finely.
  3. Preheat the oven to 190 degrees. Break the eggs into a bowl, add yogurt, salt, and curry.
  4. Mix with a whisk until smooth. Add boiled and cooled rice and green onions to the mixture. Stir until smooth.
  5. Lubricate the form with vegetable oil, pour the mixture, and level. We put the form in a preheated oven and cook an omelet with rice for 20-25 minutes, until golden brown.
  6. We take out the finished omelet with rice from the oven and serve.
