Instructions

Wash or peel all ingredients. Cut the onions, carrots, mushrooms and potatoes into large pieces, they should be ready for use in the blender. Finely chop or press the garlic.
Heat some oil in a pan. Sauté the onion and garlic, then add the onion, carrots, mushrooms and potatoes. Salt and pepper (I add about 1 tablespoon of salt and 2 tablespoons of pepper because I like it spicy). Now add a pinch of caraway seeds and parsley (or other herbs) and steam everything for a few minutes with the lid closed. Swing occasionally.
During this time, prepare 800 ml of vegetable stock. I do it cold in a mixing bowl for the hand blender or in the blender as in the photo. Then put the contents of the pan in the bowl or the stand mixer and mix with the vegetable stock and milk.
Now puree everything finely and put in a saucepan. Bring to the boil and let it steep for another 5 minutes with the lid on. Depending on the desired consistency or if the soup is too creamy, add a little broth.
