Ingredients

  • 180 g date (s), pitted, dried, rouhly chopped
  • 300 ml boiling water
  • 1 teaspoon baking soda
  • 60 g butter
  • 180 g suar, white
  • 240 g flour
  • 1 teaspoon Baking powder
  • 1 egg (s)
  • 1 teaspoon vanilla extract

For the sauce:

  • 60 g butter
  • 90 g suar, brown
  • 100 ml cream

Instructions

  1. Preheat the oven to 160 degrees. Put the dates in a bowl, mix with the baking soda and pour boiling water over them. Leave. In the meantime, stir the butter and sugar until they are pale in color. (I personally think it`s easiest in the food processor). Gradually add the egg, flour and baking powder. Then add the dates with the liquid, and finally the vanilla essence. Mix everything together well. Pour the dough into a greased casserole dish (or individual small molds) and bake in the oven for about 35 minutes. (You can do the test as usual when baking, with a wooden stick, if nothing sticks to it, the pudding is ready)
  2. For the sauce, bring all the ingredients to a boil in a saucepan, cook for 2 minutes while stirring and pour over the warm pudding. Makes approx. 4-6 servings, depending on your appetite.
  3. Another note: although the Original Sticky Toffee Pudding is usually prepared with dates, these can be replaced by prunes.
