Wash, clean and cut the vegetables. Spread everything on the perforated tray of the steamer, season with salt and pepper and cook at 100 degrees for 20 minutes or pre-cook the vegetables for 7 minutes in boiling salted water and drain well.
Lightly brown the butter in a pan, toss the cooked vegetables in it and simmer for about 5 minutes on a mild heat.
Fry the fried eggs in a separate pan, season with salt and pepper.
Chop the parsley and / or coriander and sprinkle over the vegetables. Arrange everything on the plates and place the fried eggs on top and serve immediately.
If you like it, you can also use garlic, cayenne pepper and / or nutmeg.
The vegetables can also be varied as desired, you can also add potato cubes.
