Ingredients

  • 400 g ribbon pasta, (fettucine or taliatelle)
  • 500 g pumpkin (se), (butternut squash)
  • 2 tablespoon lemon juice
  • 200 g feta cheese
  • 2 red pepper (s)
  • 1 bunch basil
  • olive oil
  • salt and pepper

Instructions

  1. Preheat the oven to 200 ° C top / bottom heat.
  2. Peel and dice the pumpkin. Place on a baking sheet, brush with oil and season with salt and pepper. Cook for 15-20 minutes until tender.
  3. Meanwhile, cook the pasta in salted water according to the instructions on the packet. Clean the peppers and cut into thick strips. Dice the feta cheese. Wash and pluck the basil. Briefly fry the pepper strips in a large pan with a little oil. Add the finished pasta. Then mix in the pumpkin and season everything well with lemon juice, pepper and salt. Finally sprinkle the feta cheese on top and garnish with basil.
