Pea Porridge with Onions, Herbs and Saffron

An unusual recipe for pea porridge with onions, saffron, and fresh herbs – mint, parsley, and thyme. They say that the recipe is medieval, from the times of knights.

Ingredients

  • Split peas – 1 glass
  • Onions (small size) – 6 pcs.
  • Fresh mint – 2 sprigs
  • Fresh parsley – 2 sprigs
  • Thyme – 2 branches
  • Saffron – 1 pinch
  • Olive oil – 2 tbsp
  • Salt to taste

Directions

  1. Peel the onion and cut it into halves. Wash mint, parsley, and thyme.
  2. Rinse peas and pour into a saucepan.
  3. Pour 3 cups of water over the peas and put on medium heat.
  4. Add the onion, mint, parsley, and thyme immediately.
  5. After 2 minutes, remove the mint, parsley, and thyme from the pan and put on a napkin. Get the onion after 5-10 minutes of cooking.
  6. Continue to cook the pea porridge for another 40 minutes on low heat. You can cover the pot with a lid.
  7. Chop the greens. It is advisable to remove tough twigs, leaving only the leaves.
  8. Heat the olive oil in a frying pan, put the pea porridge with herbs and onions. Season to taste.
  9. Add a pinch of saffron. Fry the pea porridge with onions, herbs, and saffron for about 5 minutes and serve.
