Buckwheat Porridge with Pumpkin, Garlic and Herbs

Buckwheat, cooked with the addition of pumpkin slices, tomato paste, aromatic Italian herbs, and garlic, acquires a bright rich color and mouth-watering aroma. An excellent universal dish for every day: budget, unusual and tasty!

Ingredients

  • Pumpkin – 270 g
  • Buckwheat groats – 150 g
  • Onions – 65 g
  • Tomato paste – 25 g
  • Garlic – 1-2 cloves
  • Dried Italian herbs – 1/4 teaspoon
  • Vegetable oil – 1-2 tbsp
  • Salt – 1/2 teaspoon
  • Ground black pepper – on the tip of a knife
  • Water (boiling water) – 350 ml

  • Fresh dill – to taste
  • Fresh parsley – to taste

Directions

  1. Rinse the buckwheat thoroughly and fold it onto a strainer. After the water drains from the buckwheat, transfer the cereal to a dry frying pan and put on medium heat. Stir frequently with a spatula and cook for about 4-5 minutes. The groats should dry out and become more crumbly. Remove the fried buckwheat from heat and set aside.
  2. Wash the pumpkin, cut off the dense peel. Cut the peeled pumpkin pulp into small cubes about 7×7 mm in size.
  3. Peel the onion and cut into small cubes. Heat the oil in a heavy-bottomed saucepan. Add the chopped onion and sauté, stirring occasionally, for 3-4 minutes over medium heat, until soft and lightly browned.
  4. Add the pumpkin slices to the saucepan and, while stirring, cook for another 5-7 minutes over low heat, until the pumpkin is slightly tender.
  5. Peel and chop the garlic. Add chopped garlic, salt, tomato paste, black pepper, and Italian herbs to the saucepan. Cook over low heat, stirring occasionally, for 1 minute.
  6. Smooth out the food on the bottom of the pan, put the fried buckwheat on top in an even layer. Gently pour in boiling water, cover, and put on high heat.
  7. After boiling, reduce heat to low and cook for 15 minutes. Buckwheat should completely absorb water. You can remove the pan from the stove, wrap it with a towel and let the dish brew for 10-15 minutes. Buckwheat porridge with pumpkin, garlic, and herbs is ready!
  8. Serve immediately after cooking, adding chopped herbs to each serving if desired.
