Wash, core and thinly slice the peaches. Transfer to a medium-sized saucepan and cover with water. Add sugar, vanilla sugar or vanilla extract and the juice of half an organic lemon and bring to the boil. Simmer on medium heat for about 20 minutes, stirring occasionally.
Strain, pour the syrup back into the pot and simmer for another 2 - 3 minutes. Then put it in a clean, sealable container, let it cool down and let it steep in the fridge at least overnight.
Put the strained peaches with a little syrup in a mason jar, so you can make great peach tarts, for example.
For the soda, dilute the syrup with mineral water in a ratio of 1: 3 or to taste.
