Pelmeshki Cottage Cheese Biscuits with Nuts and Jam

Want to surprise your guests? Then offer them to tea … “dumplings”! No, not ordinary dumplings, but curd biscuits with a nut filling inside, similar to dumplings. These cookies are formed using a mold for making dumplings.

Servings: 8

Cook: 1 hour 25 minutes

Ingredients

For the dough:

  • Cottage cheese – 200 g
  • Butter – 100 g
  • Egg (small) – 1 pc.
  • Sugar – 20 g
  • Flour – 200 g (1.5 cups with a capacity of 200 ml) + for preparing the mold
  • Baking powder – 4 g
  • Vanillin – 0.5 g (1 pinch)
  • Salt – 1 pinch

For filling:

  • Walnuts – 150 g
  • Apricot jam – 35 g
  • Sugar – 30 g

For decoration:

  • Powdered sugar – 1 tbsp

Directions

  1. Put cottage cheese and softened butter in a bowl.
  2. Add the egg.
  3. Add sugar.
  4. Mix everything well until smooth.
  5. Sift flour through a sieve into a bowl with butter-curd mass.
    Add baking powder, salt and vanillin.
  6. Knead a soft, non-sticky dough.
    Place the dough in a bag or wrap in plastic wrap and refrigerate for 30 minutes.
  7. Stir the walnuts in a dry skillet until desired.
  8. Grind the nuts into small crumbs with a blender.
  9. Add sugar to the nuts, mix well.
  10. Add apricot jam to the sugar nuts. Stir.
  11. You should get a dense pasty filling.
    Turn on the oven to preheat to 180 degrees.
  12. Divide the dough into three parts and roll each into a layer a little larger than the dumplings mold.
  13. Thoroughly sprinkle the dumplings with flour. Place a layer of dough on it. Spread half of the nut filling into the cells.
  14. Close the top with a second layer of dough and roll with a rolling pin over the entire surface, pressing firmly. Remove excess dough.
  15. Shake the dumplings out of the mold.
  16. Sprinkle flour on the dumplings pan again and add the third layer of dough. Place the remaining filling into the trays. Trim any excess dough.
    Combine the remaining dough scraps, roll them into a fourth layer and close the filling on top. Roll again with a rolling pin and remove the cookies.
  17. Line a baking sheet with baking paper or a special rug. Place the nut-filled cottage cheese biscuits on a baking sheet a little spaced apart.
  18. Using a knife or kitchen scissors, make a cross-cut in the center of each dumpling.
  19. Place the baking sheet in a preheated oven and bake the curd dough cookies for 15-18 minutes at 180 degrees.
  20. Remove cookies from oven, cool and sprinkle with powdered sugar.

Curd cookies “Pelmeshki” with nuts and jam are ready.
