  • 1 small onion (s)
  • 3 slices ham, air-dried
  • 2 small cherry tomatoes
  • 3 medium egg (s), organic
  • 1 tablespoon rapeseed oil or butter
  • some chives
  • Balsamic cream

Instructions

  1. You can recognize a good cook by the scrambled eggs.
  2. Cut the onion as small as possible, the ham into fine strips, the tomatoes into small, thin slices.
  3. Heat the pan gently, add a drop of oil or butter, then the ham strips and the onion. Lightly roast everything until the onion has some color. In the meantime, beat the eggs in a bowl and stir lightly with a fork. DO NOT beat with a whisk, do not add milk, seltzer, etc. until the mixture has light yellow and white streaks.
  4. Put the tomatoes in the pan and fry briefly with the onions and ham.
  5. Switch off the stove. Place the contents of the pan on a plate, place the eggs in the pan and gently push the remaining heat from the outside inwards until it starts to set. DO NOT stir! Just before the eggs are ready, carefully fold in the onion, ham and tomatoes, add some freshly ground pepper, salt (carefully, the ham!), Place on a plate, sprinkle with fresh chives, with 2 - 3 dabs of balsamic cream around it if you like
  6. A small glass of freshly squeezed orange juice, coffee and a crunchy toast - there is hardly anything better in the morning.
