Ingredients

  • 8 slices pineapple, fresh
  • 2 tablespoon butter
  • 100 g almond (s), chopped
  • 8 lemon balm leaves, chopped
  • 3 tablespoon sugar, brown
  • 2 tablespoon Marsala
  • 1 teaspoon chilli flakes, alternatively sambal oelek
  • 2 tablespoon oil (walnut oil)

Instructions

  1. Roast the almonds in a pan without fat. Mix the lemon balm with the sugar, marsala, chilli flakes and oil, mix in the hot almonds.
  2. Fry the pineapple in the same pan in the melted butter for 2 - 3 minutes on each side. Halve the pineapple slices and arrange on plates with the almond brittle.
