Ingredients

  • 250 g dark chocolate
  • 60 g butter
  • 1 tablespoon port wine
  • 6 egg (s)
  • 3 tablespoon sugar
  • 6 tablespoon Madeira, (Portuguese fortified wine)
  • 1 clove (s)
  • 0.5 teaspoon ½ cinnamon
  • 50 ml orange juice
  • 1 tablespoon sugar
  • 30 g butter
  • 4 fig (s), fresh

Instructions

  1. Break the chocolate into small pieces and melt together with the butter in a double boiler. Remove from the water bath and stir in the port wine.
  2. Separate eggs. Beat egg yolks and sugar until frothy and mix carefully with the chocolate mixture. Beat the egg whites until stiff and fold into the mixture.
  3. Chill the mousse for 2-3 hours.
  4. Peel the figs and cut them into slices. Briefly bring the Madeira, clove, cinnamon, orange juice, sugar and butter to the boil. Let cool and then pour over the figs. Marinate the figs for 2 hours, drain and serve with the mousse.
  5. A delicious variant of the classic chocolate mousse.
