Ingredients
- 650 g potato (s), new, peeled
- 1 large avocado (s), ripe
- 2 teaspoons herbs, fresh, chopped
- 0.5 ½ lemon (s), juice it
- salt and pepper

- Boil potatoes, drain, cut into slices and place in a large bowl. Peel and mash the avocado and mix into the potatoes, along with the lemon juice and herbs. Season to taste with salt and pepper.
- I like to use dill and chives, but parsley and tarragon or a mixture with fresh coriander also go well.
