Ingredients
- 8 potatoes, floury boiling
- 1 large avocado (s), ripe
- 2 spring onion (s)
- 1 bunch parsley
- 1 chilli pepper (s)
- salt and pepper

- Peel and dice the potatoes and cook them in water.
- In the meantime, cut the spring onions and chilli pepper into small rings. Finely chop the parsley. Halve the avocado, remove the stone and scrape out the pulp with a spoon.
- When the potatoes are cooked (knife test), pour off the water and collect 1 cup.
- Next, add the avocado to the potatoes and mash everything to a pulp. If the mixture is too firm, add some of the potato water. Now season the porridge with salt and pepper and add the spring onions, chilli pepper and parsley.
- The mash is done and it can be served.
- A salad, fish, gratinated cheese and much more go well with the mashed potatoes.
- Tips:
- With this porridge you can again experiment as you like it.
- For example, garlic goes really well with potatoes and avocado.
- Instead of parsley, you can use other herbs.
- A little lemon also gives the dish a special note.
