Potato Tortilla

Spanish tortilla – a delicious and hearty dish made from potatoes and eggs, with cheese and tomatoes – will decorate the table and delight you not only with its appearance but also with its wonderful taste.

Servings: 2

Ingredients

  • Medium potatoes – 2 pcs.
  • Small tomato – 1 pc.
  • Bulb onions – 1 pc.
  • Hard cheese – 30 g
  • Feta cheese – 50 g
  • Chicken eggs – 2 pcs.
  • Sour cream – 100 g
  • Olive oil (for lubricating the mold) – 0.5 teaspoon
  • Provencal herbs – 0.5-1 teaspoon (to taste)
  • Salt to taste
  • Ground black pepper – to taste
  • Thyme (for serving) – 1 sprig

Directions

  1. First of all, let’s prepare the tortilla filling. Combine eggs, sour cream in a bowl, add Provencal herbs, salt, and pepper.
  2. Using a whisk, beat the mixture until smooth.
  3. Grate hard cheese, cut the feta into cubes. Place both types of cheese in a bowl with the egg and sour cream mixture. Let’s mix.
  4. Peel the potatoes and cut them into thin slices. Lubricate the baking dish with vegetable oil. Put the potato circles overlapping in one layer. Sprinkle the potatoes on top with salt, pepper, and Provencal herbs. Let’s make another layer of potatoes.
  5. Cut the onion into half or quarter rings. We spread the onion over the potatoes.
    Fill the potatoes and onions with the previously cooked egg-sour cream filling with cheese.
  6. Cut the tomatoes into slices. Place the tomato slices on top of the tortilla in random order. We send the form with the tortilla to the oven preheated to 180 degrees for 45-50 minutes.
  7. The potato tortilla with cheese and tomatoes is ready!
  8. Cut the Spanish tortilla into portions and serve hot, garnished with a sprig of thyme.
