Pumpkin and Persimmon Vertuta, Whole Grain Flour

Vertuta is a national Moldovan pastry in the form of a roll made of stretched dough with a filling. For the filling, you can use vegetables, cottage cheese, cheese. Whole-grain vertuta stuffed with pumpkin and persimmon is a delicious lean pastry that will be enjoyed not only by vegetarians, but also by everyone who tries it.

Ingredients

For the dough:

  • Water (hot) – 120 ml
  • Vegetable oil – 2 tbsp + for greasing the mold
  • Whole grain flour – 150 g (1 glass with a capacity of 250 ml) + for burning
  • Salt – 0.5 teaspoon

For filling:

  • Persimmon – 380 g (2 pcs.)
  • Pumpkin (pulp) – 200 g

Directions

  1. Sift flour into a bowl, add salt and vegetable oil.
  2. Stir in flour and butter and pour in hot water a little while kneading the dough with a spoon. The amount of water may differ slightly from that indicated in the recipe and depends on the moisture content of the flour.
  3. Knead the dough with your hands and round it.
    Cover the bowl with cling film and set aside while you prepare the filling.
  4. Grate the pumpkin on a coarse grater.
  5. Cut the persimmon into small slices, remove the seeds, if any.
  6. Transfer the sliced ​​persimmons to a mixer or blender bowl and purée.
  7. Turn on the oven to heat up to 180 ° C.
    Sprinkle the work surface with flour, lay out the dough and roll it into a rectangular layer, as thin as possible.
  8. Spread the persimmon puree evenly over the surface of the dough, not reaching the far long edge of about 2 cm.
  9. Place the grated pumpkin on the persimmon puree.
  10. Roll the filled dough into a roll, starting at the near edge.
  11. Grease a baking dish with vegetable oil (the butter will take about 1 teaspoon).
    Put the prepared roll in a spiral shape and send to the preheated oven. Bake the vertutu at 180 degrees until tender, for 40-45 minutes – focus on your oven.
  12. Delicious vertuta with pumpkin and persimmon made from whole grain flour is ready.
  13. Remove the twirl from the mold and cut into portions. Juicy and sweet filling due to persimmon and thin crust are delicious pastries for family tea drinking.
