Ingredients

  • 700 g pumpkin meat, prepared
  • 1 vegetable onion (s)
  • 2 tablespoons oil
  • 50 ml vegetable stock
  • 100 ml cream
  • salt
  • pepper
  • Paprika powder
  • Caraway seed

Instructions

  1. Wash the pumpkin, if necessary peel, cut, core and cut into 1-1.5 cm cubes. Also cut the onion into fine cubes or grate it roughly.
  2. First fry the onion cubes in the oil until translucent. Add the pumpkin cubes and sauté briefly. Pour in the vegetable stock and simmer covered over medium heat for about 10 minutes. Then stir in the cream and let it simmer for another 5 minutes without the lid. Now carefully season with salt, pepper, paprika and caraway seeds so that the flavor of the pumpkin meat is retained.
  3. The pumpkin vegetables go well with fish and poultry. Leftovers can still be mashed and processed into a pumpkin cream soup with a little vegetable stock.
