Ingredients

  • 300 g pumpkin (se) (Hokkaido pumpkin)
  • 0.25 liter ¼ orange juice
  • 1 stick cinnamon
  • 3 egg yolks
  • 100 g honey
  • 0.25 liter ¼ whipped cream
  • 4 sheets gelatine and some Cointreau
  • Brittle (pumpkin seed brittle)

Instructions

  1. Steam the pumpkin in orange juice (add cinnamon bark), then add 3 yolks and 100 g honey, beat the whole thing over steam warm and then cold, then add 1/4 l whipped cream, 4 sheets of gelatine (dissolved in Cointreau).
  2. Then let cool in dessert bowls or, for example, wide champagne bowls, then decorate with a dollop of whipped cream and pumpkin seed brittle
