Quail Eggs in Squash Rings

Don’t know what other zucchini dish to surprise your loved ones? Prepare the original quail eggs scrambled in courgette rings! Due to the fact that quail eggs are small in size, they ideally fit into fried courgette rings. The dish looks bright and appetizing, and it takes only minutes to cook!

Servings: 2

Ingredients

  • Zucchini (medium) – 0.5 pcs. (250 g)
  • Quail eggs – 6 pcs.
  • Sunflower oil – 3 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare the required ingredients.
    Rinse and dry the zucchini. It is better to choose a medium zucchini – about 7-8 cm in diameter
  2. Cut 6 slices about 1 cm thick from the zucchini.
  3. Using a glass, cut out the middle from the zucchini circles.
  4. Heat the sunflower oil in a skillet and add the courgette rings.
  5. Fry the rings over high heat for 3 minutes until golden brown, then turn over.
  6. Immediately drive one quail egg into each ring, but do this carefully so as not to damage the yolks.
  7. Sprinkle the eggs with salt and black pepper.
  8. Cover the skillet with a lid and cook the eggs in the courgette rings over low heat for 1-2 minutes.
  9. Scrambled eggs in courgette rings are ready.
  10. Serve hot scrambled quail eggs in courgette rings.
