Quick Pickles with Caraway Seeds

Pickled cucumbers are perhaps one of the most popular, albeit simple, appetizers. They are relevant at any time of the year, good for both meat and fish. Try this “quick” recipe for savory cucumbers.

Ingredients

Fresh cucumbers – 1 kg
Cumin – 2 teaspoon
Chili (dried flakes) – 2 teaspoon (or to taste)
Ground cinnamon – 1 teaspoon
(or chopped cinnamon – to taste)
Apple cider vinegar – 250 ml
Rice vinegar – 250 ml
Salt – 2 tbsp
Sugar – 2 tbsp
Water – 120 ml

Directions

Cut the cucumbers into thin slices.
Pour vinegar (apple and rice) into a saucepan.
Add salt and sugar.
Add water.
Add all the spices.
Put the saucepan on the fire and, while stirring, bring the marinade to a boil.
Transfer the cucumbers to a tight plastic bag (resealable).
Pour hot marinade over the cucumbers in the bag. Close the bag hermetically and leave the cucumbers to marinate for 1-2 hours.
