Radicchio Marinated in Sweet and Sour Sauce

This dish will be a good side dish for meat or fish. It can also serve as a snack with vodka. Radicchio salad is prepared in a matter of minutes and can be consumed in a few hours.

Ingredients

  • Radicchio salad (Italian chicory) – 2 heads of cabbage
  • Bulb onions – 1 pc.
  • Carrots – 1-2 pcs.
  • Peppercorns
  • Carnation
  • Bay leaf
  • Salt
  • Olive oil
  • Wine – 200 ml
  • Apple cider vinegar (or wine) – 150-100 ml
  • Salt – 1 teaspoon
  • Sugar – 1-2 tablespoons

Directions

  1. Wash the salad and cut into large pieces (about 6-8 from one head of cabbage). Fry lightly in vegetable oil, on both sides.
  2. We put it in the form.
  3. Fry the onion, cut into quarter rings, and the carrots, grated on a coarse grater.
  4. Spices – black pepper, white and pink peas, cloves – we tie in cheesecloth. I do this because I do not like picking spices out of the finished dish.
  5. Mix the wine and vinegar, add sugar, salt. Pour into a pan with onions and carrots. Add spiced cheesecloth and bay leaf. We boil everything for about 10 minutes.
  6. Pour radicchio with the resulting marinade. Cover with foil. Put the radicchio salad in the refrigerator for 3 hours (preferably at night).
