In a small bowl, add the egg, egg yolk, parmesan and pepper to taste. Whisk well with a fork.
Cut the bacon slices crosswise into strips approx. 1.5 cm wide. Fry in a pan. But it shouldn`t be crispy yet. Cook the pasta in boiling salted water according to the instructions on the packet until al dente.
Add olive oil to the pan with the bacon, heat and stir. As soon as the oil is hot, remove the pan from the heat. Pour some pasta water over the bacon and stir. Add the ramen noodles and mix. Add the egg mixture. Make sure that it is placed on the pasta and not directly on the pan. Stir vigorously.
The heat from the pan turns the egg mixture into a creamy sauce. But if the eggs get too hot, they`ll turn into a kind of scrambled egg. If necessary, additional pasta water can be added to get a smooth but creamy sauce.
