Ingredients

  • 1 sachet rice
  • Salt water
  • 0.5 ½ cucumber (s) or zucchini
  • 150 g broccoli
  • 100 g peas
  • 100 g carrot (s), fresh or frozen, finely chopped
  • 1 bell pepper (s)
  • 1 onion (s)
  • 4 tablespoon tomato paste
  • 100 ml vegetable stock
  • 100 g cream cheese
  • salt and pepper

Instructions

  1. First cook the rice in salted water. In the meantime, cut the onion, bell pepper and cucumber into small cubes and fry in a pan with hot oil. Then add the carrots, peas and broccoli.
  2. After a short time, add the 4 tablespoons of tomato paste and stir everything well. Deglaze with 100 ml vegetable stock and bring to the boil.
  3. Then stir in the cream cheese and season with salt and pepper to taste. Bring everything to the boil again and finally add the rice and stir well.
  4. If you like meat, you can sear strips of chicken beforehand and add them. That tastes delicious too.
