Instructions

  1. Melt the butter with a dash of oil in a saucepan, toast the semolina in it until it turns dark. Deglaze with the broth and simmer for about 15 minutes.
  2. Attention, the semolina smokes when roasting. Do not deglaze with the broth too quickly, the darker the semolina, the nuttier the taste of the soup.
