Rolls “Roses” Stuffed with Cottage cheese and Raisins

Today we are preparing yeast buns with delicate curd filling with raisins. Incredibly lush and mouth-watering rose buns, which are suitable for both home tea drinking and for receiving guests. The baker prepares and you repeat to your health!

Ingredients

For the dough:

  • Flour – 500 g (about 3 cups of 250 ml)
  • Pressed yeast – 20 g
  • or dry yeast – 7 g
  • Sugar – 100 g
  • Milk (warm) – 240 ml
  • Yolks – 2 pcs.
  • Butter (melted) – 120 g
  • Salt – 1/2 teaspoon

For filling:

  • Cottage cheese – 500 g
  • Sugar – 100 g
  • Vanilla sugar – 1 tbsp
  • Corn starch – 1-2 tbsp
  • Raisins – 100 g

To grease buns:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

For decoration:

  • Powdered sugar – to taste

Directions

  1. Add a couple of tablespoons of sugar to warm milk, crumb the pressed yeast and stir. Pour in a couple of tablespoons of flour and mix.
    Let it stand for about 10 minutes, good (live) yeast will be taken with a cap.
  2. We send dough, two yolks, salt and sugar residues to the flour.
  3. We collect the dough into a lump and only then add the melted (cooled) butter.
    Knead for 5 minutes, the dough is soft, pleasant and very aromatic.
    Cover the dough in a cup with a film so that it does not get windy, and leave it for proofing (to rise), in time – about 40-60 minutes.
  4. While the dough is right, you can cook and even eat the filling. 🙂 Add sugar, vanilla sugar and starch to the curd. Punch slightly with a hand blender.
  5. Add raisins and mix.
  6. The dough came up.
  7. Knead the finished dough a little, divide into 14 equal parts and round. We cover the dough blanks with a film – let them rest for 10 minutes (this way it will be easier to work with the dough, it will not shrink when rolling).
  8. Roll the dough balls into small cakes, make six cuts in a circle at the same distance to form petals. Put the filling in the center.
  9. We form buns-roses (we connect the dough petals with corners opposite each other). We spread on a prepared baking sheet, covered with parchment, at a short distance.
  10. We turn on the oven to heat up to 180 degrees, in the meantime, let the buns rise (10-15 minutes in a warm kitchen).
    Before baking, grease the buns with yolk with 1 tablespoon. a spoonful of milk.
  11. We bake at 180 degrees for 20 minutes (focus on your oven).
    Cool the finished buns on a wire rack.
  12. Then you can sprinkle with icing sugar.
