The Capercaillie Nest salad with smoked chicken, pickled cucumbers and quail eggs will decorate any festive table thanks to the original decoration of fried potatoes. It tastes a bit like Olivier salad, so it is associated with a holiday and a good mood. Your guests will definitely remember this dish for a long time!

Ingredients
Potatoes – 6-8 pcs. (400 g)
Smoked chicken – 300 g
Pickled cucumbers – 2-3 pcs. (200 g)
Quail eggs – 10-12 pcs.
Mayonnaise – 3 tbsp
Fresh dill – 3-4 branches
Vegetable oil – 200 ml
Salt to taste
Directions
Prepare all ingredients. Wash the potatoes and herbs.
Pour quail eggs with cold water and boil for 4-5 minutes after boiling. Then transfer to cold water and cool.
Boil half of the potatoes in the skins until tender. Depending on the type of potato, this takes 15-20 minutes after boiling. Then cool the potatoes completely.
Peel the quail eggs. Peel the potatoes as well.
Set aside 4-5 eggs to decorate the salad, cut the rest into cubes. Cut the boiled potatoes into small cubes.
Cut the pickles and smoked chicken into cubes the same size as the rest of the ingredients.
Combine smoked chicken, eggs, cucumbers and potato cubes in a deep bowl and season with salt.
Add mayonnaise, mix all ingredients. Place the salad bowl in the refrigerator to cool.
Cook fried potatoes to garnish the salad. To do this, peel the remaining potatoes and grate with a Korean carrot grater or finely chop into thin strips.
Place the potato strips on a paper or cloth towel to absorb the excess liquid so the potatoes are crispy.
Heat 100 ml vegetable oil in a skillet. Fry the potatoes in small portions in hot oil until golden brown.
Carefully, do not overcook the potatoes – thin strips are fried very quickly, just a few minutes is enough. Remove the potatoes from the oil with a slotted spoon and fry the next batch.
Put the fried potatoes on a plate lined with a paper towel – it will absorb the excess vegetable oil.
Transfer the chilled salad to a plate. Make a small indentation to form a nest.
Place potato strips on top and sides of the ring.
Chop the dill finely. Place the dill and the remaining whole quail eggs in the center of the nest.
Salad “Capercaillie’s Nest” with smoked chicken is ready. Serve it immediately to keep the potatoes crisp.
