Chicken Cutlets in Potato Nests

A wonderful two-in-one lunch dish! Having cooked chicken cutlets in potato nests, you will prepare both the main course – juicy chicken cutlets, and a side dish – mashed potatoes with cheese. Very convenient, tasty, unusual, and festively elegant!

Servings: 6

Ingredients

For chicken cutlets:

  • Minced chicken – 350 g
  • Hard cheese – 40 g
  • Onions – 60 g
  • Egg white – 1 pc.
  • Salt to taste
  • Ground paprika – 1 teaspoon

For potato nests:

  • Potatoes – 700 g
  • Water – 1 l
  • Yolk – 1 pc.
  • Hard cheese – 40 g
  • Butter – 25 g + for greasing the mold
  • Salt to taste
  • Spices (Italian herbs) – 0.5 teaspoon

Additionally:

  • Hard cheese – 30 g

Directions

  1. Prepare all the ingredients needed to cook the chicken cutlets in the potato nests.
  2. Peel, rinse, and cut the potatoes. Transfer the potatoes to a saucepan.
  3. Pour potatoes with clean cold water and place on the stove over high heat. After the water boils, reduce the heat. Season the potatoes with salt and cook until tender (about 20 minutes).
  4. While the potatoes are cooking, cook the minced chicken cutlets. Combine minced chicken and finely chopped onions in a bowl.
  5. Add egg white, coarsely grated hard cheese, add salt, and ground paprika.
  6. Stir the minced meat so that all the ingredients are evenly distributed among themselves. Place the bowl of minced chicken in the refrigerator.
  7. When the potatoes are boiled, drain all the water from them.
  8. Mash boiled potatoes until puree.
  9. Add the yolk, spices (I have Italian herbs), a slice of butter, and grated hard cheese to the mashed potatoes.
  10. Stir the mashed potatoes until the additives are evenly distributed.
  11. Grease a baking dish with butter.
  12. Form mashed potatoes into balls (6 pieces) and place them in the prepared mold.
  13. Use a glass or other suitable container to make a depression in each potato ball. Before making indentations, the bottom of the glass can be dipped into the flour to prevent it from sticking to the puree.
  14. Remove the minced chicken from the refrigerator. Shape into round patties according to the number of potato nests (6 pieces) and place in the prepared cavities.
  15. Put the form with cutlets in the nests in the oven preheated to 200 degrees for 25 minutes. Then take it out.
  16. Sprinkle the chicken cutlets in the potato nests with the grated cheeseю
  17. And bake for another 10 minutes at the same temperature.
  18. Chicken cutlets in potato nests are ready! Serve hot for lunch. Can be served with a light salad of fresh vegetables.
