Minced Chicken Cutlets with Filling

Minced chicken cutlets are cooked quickly, they are tender and tasty. You can diversify chicken cutlets by adding cheese filling with eggs and herbs. The cheese will add spice to tender chicken meat.

Servings: 6

Ingredients

  • Chicken fillet – 300 g
  • White bread – 2 slices (50 g)
  • Milk – 1/2 cup
  • Egg – 1 pc.
  • Ground black pepper – a pinch
  • Salt to taste
  • Rusks – for breading
  • Vegetable oil – for frying

For filling:

  • Hard cheese – 70 g
  • Egg – 1 pc.
  • Parsley or dill to taste
  • Butter – 1 tbsp

Directions

  1. I wash the chicken fillet and dry it.
  2. Having cut the fillet into pieces, I twist it through a meat grinder with a fine mesh.
  3. For softness and juiciness (bread retains moisture) I add white bread. It is advisable to take dried bread. I soak the slices of bread in milk, after cutting off the crust from the bread.
  4. I squeeze the bread soaked in milk, add it to the minced chicken. I add salt, pepper, and a raw chicken egg.
  5. I mix all the ingredients added to it with the minced chicken. I knead the minced meat well, “beat” it to make it tender and strong. To do this, I take the minced meat in my hands and throw it back into the bowl.
  6. Then I prepare the filling for the cutlets. I rub hard cheese on a grater.
  7. Grinding a hard-boiled chicken egg. I add finely chopped parsley to the egg.
  8. From the minced chicken I form a flat cake. For convenience, I moisten my hands with water, after pouring it into a bowl and placing it next to it. It is easy to work with minced meat with wet hands. The cutlets are smooth and even.
  9. I mix grated cheese, chopped boiled chicken egg, finely chopped parsley. I spread the filling on a spoon in the middle of the minced meat cake. I add a piece of butter to the filling.
  10. Gently pinch the edges of the cake over the filling, forming an oval cutlet. Do not forget to moisten my hands with water. Breaded cutlets in breadcrumbs. You can add semolina to the breadcrumbs.
  11. I made six cutlets. I put the cutlets in a frying pan preheated with sunflower oil. The cutlets are fried quickly. I fry on one side for about 5 minutes, turning the cutlets over, then fry for 5 minutes on the other side. Then, reducing the heat, I steam them under a closed lid for 5 minutes.
  12. Filled minced chicken cutlets can be served with vegetable salad, mashed potatoes, rice. In chicken cutlets, you can put just one cheese, cut into small cubes, or an egg with herbs without the cheese. Enjoy your meal!
