Salad with Chicken, Prunes and Mushrooms (New Year’s Eve)

Hello everyone! Today I will prepare a salad with chicken, prunes and mushrooms, which has been a favorite of the New Year’s table for many years. In general, flaky salads are always popular. They are prepared simply, and there are a lot of cooking options. Such festive salads always look bright and beautiful, and they are eaten first.

Servings: 4

  • Chicken fillet – 300 g
  • Champignon mushrooms – 200 g
  • Prunes – 150 g
  • Onions – 90 g
  • Eggs – 4 pcs.
  • Tomatoes – 1-2 pcs.
  • Mayonnaise – 100 g
  • Vegetable oil – 2 tbsp
  • Salt to taste
  • Ground pepper – to taste
  • Bay leaf (for cooking fillets) – 1-2 pcs.
  • Allspice peas (for cooking fillets) – to taste

Ingredients

  1. We prepare the necessary ingredients for preparing the salad. Boil the chicken fillet in advance with the addition of bay leaves and allspice. Cook hard boiled eggs. Cool the chicken and eggs.
  2. Cut the onion and mushrooms into small cubes.
  3. Fry chopped onions and mushrooms in vegetable oil. In the process of frying, salt and pepper to taste. Cool it down.
  4. Scald prunes with boiling water, dry and finely chop. We leave two pieces to decorate the salad.
  5. Cut the boiled chicken fillet into small cubes.
  6. We form a salad, laying out the layers in the following order: 1 layer – prunes and a net of mayonnaise; 2nd layer – chicken fillet and a net of mayonnaise.
  7. 3rd layer – fried mushrooms with onions. Grease this layer liberally with mayonnaise.
  8. We divide the eggs into yolks and whites. Rub the yolks on a fine grater and form the “face” of Santa Claus.
  9. Rub the egg whites on a coarse grater. We form a beard and a hat from them.
  10. Let’s make the eyes of Santa Claus from prunes. Part of the cap and nose – from tomatoes (can be made from red bell pepper). Holiday greetings! All good!
