  • 2 salmon fillet (s)
  • 1 egg (s)
  • 1 bowl polenta
  • salt and pepper
  • Herbs (e.g. dill, dried wild garlic, )
  • some oil

Salmon in Polenta and Herb Breading

Instructions

  1. Cut the salmon fillet to the size of fish fingers, season with salt and pepper. Whisk the egg. Mix the polenta, a little salt and the herbs.
  2. Turn the fish first in the egg, then in the polenta mixture and press the breading on well. Heat the oil in a pan and fry the fish fillets on all sides until they are cooked through.
  3. The breading can of course be varied as desired (e.g. with chervil, garlic powder, ).
