Ingredients

  • 750 g black salsify (s)
  • 1 tablespoon butter
  • 1 tablespoon curry powder
  • 200 ml cream
  • salt
  • sugar
  • Lemon juice

Instructions

  1. Peel the salsify, cut diagonally into slices about 3 cm thick and immediately put them in vinegar water so that they stay white.
  2. Melt the butter in a saucepan. Sweat the curry briefly over a mild heat while stirring. Add the black salsify and turn in the curry butter, season with sea salt and sugar and stir in the cream. Cover and cook the salsify over a moderate heat for 20-25 minutes. Season to taste with lemon juice before serving.
  3. Rice and a salad, for example, go well with this.
