Mix 5 tablespoons of mustard with 5 tablespoons of olive oil and lemon juice. Salt and pepper the meat and brush with the mustard paste. Marinate in the refrigerator for about 3 hours.
Wash the rocket, tomatoes and basil. Cut the tomatoes into 1 cm thick slices.
Heat the remaining oil in a pan. Fry the fillet slices in it (or grill on the beach). Halve the baguettes lengthways, then cut into pieces approx. 15 cm long and brush the cut surfaces with the remaining mustard.
Fill the baguette pieces with rocket, tomato slices, basil leaves and beef fillet and serve.
