Ingredients

  • 1 ½ kg beans, green, fresh
  • 1 onion (s)
  • 8 potato (s), waxy variety
  • 4 sausages (cabbage sausages)
  • 100 g bacon, mixed, smoked
  • 2 vegetable stock cubes
  • 1 tablespoon salt
  • 1 bunch savory

Instructions

  1. Wash the beans and cut them off at the ends. Chop the beans with the bean chopping machine and season them well.
  2. With a bean chopping machine with a hand crank, it`s quick and the result is excellent, as this is the only way for the beans to develop their typical chopped bean flavor. The bean chopping machines are still available in stores, but you have to look for them.
  3. Cut the potatoes into small, larger cubes as thick as your thumb.
  4. Cut the onion and bacon into cubes and fry them. Add the finely chopped beans, potatoes and cooked sausages and bring to the boil with approx. 1.5 liters of water. Add the stock cubes dissolved in a little hot water and the savory and let everything simmer slowly for about 30 minutes.
  5. If you want to thicken the soup, take 2-3 ladles out of the soup with as many pieces of potato as possible and puree this part with the hand blender and then add it to the rest of the soup.
