Ingredients

  • 1 small Piece (s) yeast, about the size a small walnut
  • 600 ml water
  • 660 g flour, e.., Whole wheat or spelled flour or mixed; or partly whole rain, partly round
  • 120 g buckwheat flour, flaxseed or oat flakes, individually or mixed
  • 30 g sesame seeds
  • 50 g sunflower seeds
  • 3 teaspoons, leveled salt
  • 0.5 teaspoon ½ coriander
  • Fat for the shape
  • Sesame seeds for the mold

Instructions

  1. Dissolve the yeast in the water and then add all the ingredients to the yeast water. Use a large bowl for this! Stir with a wooden spoon or other large spoon until everything is mixed together.
  2. Place the bowl in a plastic bag and let rise overnight (about 10 hours, more is always possible).
  3. The next morning, grease a loaf pan and sprinkle the bottom and sides with sesame seeds. Pour the dough directly into the mold without kneading, smooth it out and sprinkle with water. Cut crosswise and let rise again until the oven has heated up to 250 ° C convection.
  4. When the temperature is reached, slide the bread in and reduce the temperature to 200 ° C. Bake for 45 to 50 minutes.
  5. After baking, sprinkle the bread with water again, this gives it a nice crust. It is also advisable to place an ovenproof dish filled with water in the oven while baking.
