Ingredients

  • 500 g potato (s), peeled and weihed
  • 200 g shallot (s), or onions
  • 1 teaspoon rapeseed oil
  • 1 tablespoon tomato paste
  • 1 tablespoon mustard
  • 1 tablespoon dill
  • 1 liter vegetable stock, homemade
  • salt
  • Pepper from the grinder
  • Chilli flakes, from the mill
  • Chives, a few stems

Instructions

  1. In a saucepan with rapeseed oil, sauté the roughly diced shallots until translucent. Add tomato paste and mustard and sauté a little.
  2. Pour in the broth, add the spices and stir. Stir in the roughly diced potatoes, bring to the boil and simmer with the lid on for about 25 minutes on a low heat.
  3. Puree the mixture into a creamy soup with a hand mixer, season to taste and sprinkle with herbs.
  4. If you like to add items to your soup, you can skim off a few pieces of potatoes before pureeing and then put them back in the soup.
