Ingredients

  • 40 g wheat flour
  • 1 teaspoon paprika powder, noble sweet
  • 1 teaspoon salt
  • 0.5 teaspoon ½ pepper, ground, black
  • 700 g rump steak (s) or roulade meat
  • 55 g butter
  • 1 onion (s)
  • 1 clove garlic
  • 225 g mushrooms or mushrooms your choice
  • 1 tablespoon lemon juice
  • 2 tablespoon red wine or water
  • 2 tablespoon tomato paste
  • 350 g sour cream or sour cream (no sour cream)

Instructions

  1. Prepare side dishes. Put on pasta water, put on rice or boil potatoes. Since the preparation of the meat is very quick, you should really start beforehand.
  2. Cut the onion into half rings or quarter rings or cubes (to taste), chop the garlic, chop the meat very thinly. Cut the mushrooms into bite-sized pieces.
  3. Take a small plastic bag (e.g. breakfast bag or freezer bag) and pour in the flour. Put the teaspoon of paprika in the bag and then add salt and pepper to the bag.
  4. Now put the meat in the bag in portions and just shake the bag so that the schnetzel is breaded all around with the flour and spice mixture. Put the finished Schnetzel in a bowl and put the next portion of meat in the spice bag and shake well.
  5. If there is still spice flour in the bag at the end, pour it onto the meat and stir in a little with your hands or put in a bowl with a lid and shake again.
  6. Melt the butter in a pan. Add the onions and reduce the heat to the lowest level and simmer in the butter for 5 minutes.
  7. Turn the heat back up and let the butter get really hot. Then add the beef and brown all over. At the beginning the meat sticks together a little, but that changes with a little stir and shake.
  8. That goes very quickly, about 5 minutes. Then stir in the mushrooms and lemon juice. Now add 2 tablespoons of water (or if you have red wine, use red wine) and stir briefly. Finally add the tomato paste. Mix everything well.
  9. Now stir in the entire amount of sour cream / sour cream. The heat makes it a little more liquid, but the sauce stays very creamy.
  10. If you like it a little more liquid, add three tablespoons of water and season with salt, pepper and paprika. Otherwise there is no need to add seasoning.
  11. Drain the pasta / rice / potatoes. Place on a plate and garnish with the beef slices.
  12. This goes well with cucumber salad or bean salad
