Ingredients

  • 500 g sliced turkey
  • 100 ml vegetable broth or meat broth
  • 2 cups crème fraîche
  • 1 bunch dill
  • 1 lemon (s), untreated
  • salt and pepper
  • 1 medium onion (s)
  • 1 bunch asparagus, green
  • some oil

Instructions

  1. Dice the onion. Peel the asparagus and cut into fine strips (preferably across), approx. 1/2 cm thick.
  2. Fry the sliced turkey in a little oil until golden brown, season with salt and pepper. Take the shredded meat out of the pan and set aside (keep warm). Add the onion and asparagus to the pan and fry (neither should be too brown). Add the vegetable stock, simmer everything together for about 5 minutes.
  3. Add the crème fraîche, stir everything well. Put the meat in the sauce and let it simmer for a few more minutes. Then grate the lemon peel into the sauce. Season the sauce with lemon juice and dill and serve immediately.
  4. I serve rice with it.
  5. Tip: If you don`t have fresh asparagus on hand, you can also use the one from the jar, but then it should only be added at the end, and it will then no longer be as crunchy.
