Ingredients

  • g 1,500 smoked pork, raw, boneless (approx. 200 - 250 per person)
  • 1 small onion (s)
  • kl. Bunch herbs (parsley, chives, thyme), finely chopped
  • 3 tablespoon mustard, medium hot
  • 2 tablespoon flour
  • 1 cup crème fraîche
  • 3 tablespoon cream cheese
  • 3 pickles, finely chopped
  • 1 tablespoon breadcrumbs
  • pepper
  • curry
  • Caraway powder
  • sugar

Instructions

  1. Cut the Kasseler crosswise. Finely dice the onion, sauté with the chopped herbs and let cool. Dust with the flour.
  2. Make a farce from mustard, creme fraîche, cream cheese and the pickled gherkins and season with pepper, curry, ground caraway seeds and sugar (no salt!). Mix with the onion mixture and breadcrumbs. Cover the Kasseler completely with this farce.
  3. Put in a roasting tube so that there is enough air and bind. Cook in the oven at 170 - 180 ° C for approx. 1 hour. Salad and baguette tastes best with it.
